Sounds like fun....there is always the mixed lettuce greens and baby spinach, throw in whatever vegies you like (carrots, celery, cucumber, cherry tomatoes, etc)....take different toppings (bacon bits, croutons, etc) and different dressings. You can pretty much make whatever.
I like this salad:
Tangy Broccoli Salad
(this recipe serves 12, so it would need to be doubled or so)
3/4 cup Miracle Whip Light Dressing
2 TB sugar
2 TB vinegar
1 bunch broccoli, cut into florets (6 cups)
6 slices bacon, crisply cooked, drained and crumbled
1 small red onion, chopped
Mix dressing, sugar and vinegar in large bowl.
Add remaining ingredients, mix lightly. Cover.
Refrigerate at least 1 hour before serving.
