Fry it up and put it in with some maccaroni and cheese and broccoli and you have the whole meal.

This recipe is a favorite with my husband and boys:

BEEF AND CHEESE CASSEROLE
1 lb.ground beef
1 (1-lb.) pkg.frozen mixed vegetables
1 pkg. Lipton onion soup mix
1 pkg. (at least 8) frozen hash brown patties (plain or cheddar)
1 med.onion, chopped (opt.)
1 pkg. brown gravy mix
1 1/2 c. water
3 c. shredded cheddar cheese

Preheat oven to 425 degrees. Brown and drain ground beef in a medium large pot. Add 1/3 onion while browning beef. Add frozen vegetables to ground beef. Combine remaining onion, onion soup mix, brown gravy mix and water together. Then add to beef and vegetable mix. Cook on medium heat until vegetables have thawed. Place hash browns side by side in a 9 x 13-inch casserole dish, covering bottom. If plain hash browns are used, then spread 1 cup of cheese over the top of hash browns. Put 1 cup of cheese into beef mixture. Stir until melted. Spread mixture over hash browns and top with remaining cheese. Bake for 30 minutes.
